Blueberry Pancakes
In a large bowl mix 2 cups flour with 1/2 tsp salt, 2 tbsp of sugar, 1 tsp baking powder, and 1 tsp baking powder. In a separate bowl beat 2 eggs and then add 2 cups of buttermilk. Pour the eggs and milk into the dry ingredients and mix together.
Heat a pan or a griddle to medium heat and add about 1 tbsp of vegetable oil (or to coat pan). scoop 1/4 cup of batter onto the hot griddle to cook the pancakes. Once bubbles have formed on top add washed blueberries and then flip to cook the other side for about 1 to 2 minutes more. Enjoy with maple syrup or alone!
Mini Blueberry Crumble:
This recipe is for one ramekin which makes it easy to modify for the number of people in your family.
Ingredients: 1 /3 cup blueberries, 1/2 tsp white sugar, fresh lemon juice, 1/4 tsp corn startch, 3 tbsp rolled oats, 1/2 tbsp of flour, 1 tbsp brown sugar, dash of salt, 1 tsp coconut oil (melted or at room temperature if liquid).
Step 1: Preheat the oven to 375F.
Step 2:Mix the blueberries with the white sugar corn starch and a squeeze of lemon juice. Place in buttered or oiled ramekin.
Step 3: In a separate bowl mix the oats with flour, brown sugar, salt and coconut oil and then pour on top of your blueberry mixture.
Step 4: Bake for 25 minutes (you can broil the top for the last 2 minutes if you want some crispness) and then let stand for 5 to 10 minutes to cool down before eating.
NOTE: this is great with milk poured on top or with vanilla ice cream or even yogurt.
Fresh Blueberries:
Fresh blueberries are always a treat! They are especially delicious if you find them growing the wild but the ones at the Farmers Market will due as well! You could buy some frozen ones and pop them in your mouth for an icy treat as well.

Blue Jello - Make this jiggly treat in the morning or early afternoon so it will be ready for dessert at dinnertime.

Blue Ombre Cookies:
Use your favourite sugar cookie recipe and cut out some fun shapes. We made stars!
Mix 2 cups icing sugar with 1/4 cup milk and split into three bowls. Leave one bowl of icing white and then add 1 or 2 drops to the second bowl, and 5 or 6 drops into the third bowl to create two shades of blue. Use a clean paint brush (we have one that we only use for baking) and have your kids brush on the three icings).

Blue Yogurt:
Perhaps your picky eater refuses to try blueberries...you could add 1 or 2 drops of blue food colouring into plain or vanilla yogurt and give it a swirl to create something blue to eat.
BREAKFAST:
Jam or Jelly
Blueberry jam or jelly is the perfect spread for Breakfast on your Blue Theme Day! Spread it on toast or bread and butter, or swirl it in your plain yogurt! Even better if you serve it on a blue plate or in a red bowl!
Blue Hard Boiled Egg:
Hardboil an egg or two ahead of time. Boil some water in your kettle and then pour in a mug. Add 1 tbsp of white vinegar to the hot water and then a few drops of blue food colouring. Have your child carefully lower the boiled egg into the mug using a spoon. Let the egg sit until it turns the shade colour you desire (the longer it stays in the blue bath the bluer it will be). Gently remove the egg and pat dry with paper towel. It is now ready to eat! (or you can keep it in the fridge to eat later).
